I think this workshop should be offered as a half day (3.5 hours)or broken up into 3 - 1 hour sessions as follows:

General overview of Wiki, UBC examples and discussion: 1 hour - hands on: exploration
Navigating and user preferences: 1 hour - hands on basic account set up
Creating a Sandbox page and self guided activity - 1-1.5 hours
