In the assignment description it says to use information from the notes, labs, and textbook to help write the essay. Do we need to cite any of these sources or is it just known that our ideas came from these sources?

You do not need to provide a full citation for these sources - Class notes, Lab Manual for Brady & Weil is sufficient for these sources. By providing a source, if we are uncertain about where you are getting a particular concept or idea we can look into the source and clarify.
