Out of a love for ice cream, we have decided to compare and contrast the labels between Ben & Jerry's Chocolate Chip Cookie Dough (Dairy and Non-Dairy). We make a comparison of the labels, ingredients used and nutritional facts.

**Cream, condensed skim milk are substituted with almond milk; frozen egg yolk and liquid whole egg are substituted with corn syrup solids. Butter is also replaced and there are some ingredients in the non-dairy version (pea protein, sunflower lecithin, tapioca flour, locust bean gum, invert sugar) that are not present in the original version (which has other ingredients like carrageenan).

Substitutes and Additives

Pea Protein[1]

Proteins play a major role in the texture of food products. They are able trap air bubbles in food which allows for the formation of foams. Pea proteins substitute egg white proteins as foaming agents in the process of whipping. Here, air is introduced and denatures protein molecules. The molecules coagulate and form a film around the air pockets. Solid foams are formed when heated proteins are denatured to form a more rigid structure, which is present in ice cream.

Sunflower / Soy Lecithin[2]

Lecithin is a phospholipid that is used as a natural emulsifier. Lecithin is commonly found in egg yolk and soybean oil. Emulsifiers act by orienting themselves between hydrophilic and hydrophobic phases to reduce interfacial tension between oil and water. Doing so prevents dispersed oil droplets and water droplets from coalescing together.

Guar / Locust Bean Gum[3][4]

Guar gum is said to act as a thickener, emulsifier, and stabilizer in vegan ice cream. The gum contributes towards making a smooth and creamy texture, that can mimic traditional ice cream. Locust bean gum is made galactomannan polysaccharides which are long, indigestible fibers. Characterized by its chain-like molecular structure, locust ben gum also serves as a gelatinizing and thickening agent in foods such as ice cream.

Carrageenan[5]

Extracted from different types of seaweed (red algae). Carrageenan is typically used as a suspending agent to keep cocoa particles suspended in chocolate milk. In ice cream, carrageenan acts as a stabilizing agent for colloidal dispersions.
