Roles of fat substitutes, sugar substitutes, and/or additives used in terms of the functional properties they contribute to the product
Fat Substitutes :
In low fat cream cheese:
- Corn maltodextrin: Maltodextrin is a carbohydrate based fat-substitute. It also functions as filler to increase the volume, creating the cheese texture. [3]
Additives :
In original cream cheese:
- Carob bean gum : Carob bean gum acts as a food thickener and stabilizer. It allows food products to have a longer shelf life[4]
- Potassium sorbate : Potassium sorbate is a widely used preservative that prolongs the shelf life of foods by stopping the growth of mold, yeast, and fungi.[5]
In low-fat cream cheese:
- Carob bean gum : Carob bean gum is used as a stabilizer, thickener, and fat replacer in foods, and also as an adjunct gelling agent[6]
- Potassium sorbate : Potassium sorbate is a widely used preservative that prolongs the shelf life of foods by stopping the growth of mold, yeast, and fungi.[7]
- Sodium citrate : sodium citrate works as an emulsifier to prevent the separation of fat and protein. It produces a smooth & creamy texture[8]
- Calcium propionate : Calcium propionate is a preservative which extends the shelf life by interfering with the growth and reproduction of molds and other microorganisms[9]
- Mono and diglycerides : Mono- and diglycerides help oil and water to blend. Because of this, they can be used to improve the texture or consistency of foods.[10]
- Xantham gum : Xanthan gum is used as a thickener and as a low-calorie substitute for fat.[11]
- Guar gum : guar gum acts as a stabilizer to give a better texture. It is also used as a fat replacement for low-fat cheese[12]
- Sorbic acid : Sorbic acid is a widely used preservative that is highly effective at inhibiting the growth of mold [13]

In the original version, 1 gram of fat gives 9 kcal, whereas, in the low-fat version, the corn maltodextrin used as a fat substitute provides only 4 kcal per gram.As a result, there is a slight difference in the consistency and creaminess in the two products. |
