  3. Explain the roles of fat substitutes, sugar substitutes, and/or additives used in terms of the functional properties they contribute to the product
    1. Fat Substitutes Mono and Diglycerides: These emulsifiers help blend ingredients like oil and water, ensuring a smooth texture and consistent ice cream. They mimic the richness and mouthfeel typically provided by fats.
    2. Sugar Substitutes Maltitol Syrup: As a sugar alcohol, Maltitol Syrup provides sweetness without the calories of sugar. It helps maintain the ice cream's moisture and gives a similar texture and mouthfeel to that of sugar. Acesulfame Potassium and Sucralose: These high-intensity sweeteners are much sweeter than sugar, so only small amounts are needed. They provide sweetness without adding significant calories, making the ice cream suitable for low-calorie or sugar-free diets.
    3. Additives Vegetable Gums (Carob Bean, Guar, Tara): These thickening and stabilizing agents improve the ice cream's texture, giving it a creamy consistency and preventing ingredient separation to ensure uniformity. Natural Flavor: Enhances the overall taste profile of the ice cream, making it more appealing. Vitamin A Palmitate: Added to fortify the ice cream with essential nutrients, contributing to its nutritional value. Annatto (for color): This natural coloring agent gives the ice cream an appealing appearance, making it visually attractive to consumers.
    4. Overall Contribution These ingredients work together to create an ice cream that is lower in calories and sugar while maintaining the desirable qualities of taste, texture, and appearance. This ensures a product that is both enjoyable and suitable for health-conscious consumers.
  4. The main differences between these two products:
    1. Sugar Content:
      • Creamery Style French Vanilla: This version typically contains sugar as a sweetener, contributing to its traditional creamy texture and sweetness. The sweetness comes from sugar cane or sugar beets.
      • No Sugar Added: As the name suggests, this version is formulated without additional traditional sugars. Instead, it contains sugar substitutes like sucralose, maltilol syrup (A sugar substitute - it has 75-90% of the sweetnees of table sugar but contains a little over half of the calories.) to provide sweetness without the calories and carbohydrates of traditional table sugar.
    2. Caloric and Carbohydrate Differences:
      • Creamery Style French Vanilla: Due to its sugar content, this version tends to have more calories and carbohydrates per serving compared to the No Sugar Added version.
      • No Sugar Added: It usually has fewer calories and carbohydrates per serving because it lacks traditional sugars. This makes it a suitable option for those watching their sugar intake, including people with diabetes or those on low-carb diets.
    3. Texture and Flavor Profile:
      • Creamery Style French Vanilla: Known for its rich, creamy texture and the classic sweetness derived from sugar. It provides a more traditional ice cream experience.
      • No Sugar Added: While efforts are made to maintain a creamy texture, sugar substitutes can sometimes alter the texture slightly compared to the creamery style. The flavor might also be slightly different due to the absence of natural sugars. Some people perceive a slight cooling effect or aftertaste with a sugar substitutes like Maltitol, which can influence the overall flavour experience.
    4. Ingredients and Additives:
      • Creamery Style French Vanilla: Besides sugar, it may contain other traditional ice cream ingredients like cream, milk, and vanilla flavoring.
      • No Sugar Added: Apart from sugar substitutes, it may have different stabilizers or thickeners to maintain texture and taste without traditional sugars.
    5. Audience and Dietary Considerations:
      • Creamery Style French Vanilla: Appeals to consumers looking for a classic ice cream experience without specific dietary restrictions related to sugar or carbohydrates.
      • No Sugar Added: Targets individuals who need to manage their sugar intake for health reasons or those looking to reduce calories from sugars while still enjoying a dessert. In summary, the primary differences lie in their sugar content, resulting nutritional profiles, taste, and target audience. The Creamery Style French Vanilla is more traditional in taste and texture with added sugars, while the No Sugar Added version provides a lower-sugar alternative using substitutes, catering to specific dietary needs.
