The similarity and differences between Canada Dry Ginger Ale and Canada Dry Ginger Ale Sugar Free.

Introduction

Canada Dry, also known as ginger ale, is a popular soft drink brand owned by the American company Keurig Dr Pepper[1]. Canada Dry ginger ale soda is made with 100% natural flavors including real gingers, but the tone of spice is not significant. The “Dry” in its name refers to the less sweetness taste comparing with Spirit and Coke. Canada Dry ginger ale has many flavors including the original flavor, lemonade, blackberry, cranberry and bold ginger ale. Each of these flavors has its diet and zero sugar version.

We compare and contrast the ingredients of Canada Dry ginger ale and zero sugar Canada Dry ginger ale. We focus on the sugar and sugar substitutes in the two soft drinks. We find out how they effect the taste and how they works.

For the other additives, we find that the citric and malic acid are used to enhance the flavors, while sodium benzoate and Calcium disodium EDTA are added for preservation.

  3. Role of Sugar Substitute:
    • Aspartame is a low-caloric sugar substitute composed of a methyl ester of dipeptide with phenylalanine and aspartic acid. It is 180 - 220 times sweeter than sucrose, thus a more effective sweetener compared to High Sucrose Corn Syrup used in the original product. Due to its high sweetness profile, it does not increase blood glucose or insulin level, however, it contributes 4 cal/g to the product's energy content.
    • Acesulfame-K is a non-caloric sweetener which can provide synergistic sweetening effect when combined with Aspartame in soft drinks. It is 200 times sweeter than sucrose.

    • The similarity and differences between the two product's ingredients are listed below.
    • For both products, carbonated water is the major component of Canada Dry drink. Citric acid is used to enhance flavors, while providing a sour and refreshing flavor which offsets the intense sweetness from HFCS or aspartame[3]. Sodium benzoate is a preservative which increase the acidity and extend shelf life[4]. Caramel color is used to provide a brownish hue in the drink, as well as enhancing foaming characteristics, mouthfeel and flavors.
    • Differences: High fructose corn syrup of 90% fructose is enzymatically produced from starch, which has a sweetness profile similar to that of sucrose. Although fructose does not increase blood sugar and insulin level as much as glucose, longterm fructose intake could cause potential health concerns related to obesity and insulin resistence that lead to type II diabetes mellitus[5]. As a sugar substitute, aspartame is a methyl ester dipeptide of phenylalanine and aspartic acid. It is approximately 200 times sweeter than sucrose, while not promoting blood glucose or insulin levels to increase. However, since patients suffering from PKU (phenyletonuria) cannot metabolize phenylalanine, thus consuming Canada Dry Zero Sugar would lead to accumulation of phenylalanine in their bodies to cause symptoms.
    • For Canada Dry Zero Sugar only, malic acid is added to blend and intensify flavors.[6]
    • Calcium disodium EDTA is a preservative and flavoring agent, which prevent chemical reactions resulting in discoloration or flavor loss.[7]
    • Acesulfame potassium (Ace-K) is a non-caloric sweetener which is 200 times sweeter than sucrose but not providing addiitonal calories to drinks. Even though Ace-K sounds tempting to consumers for lower sugar intake, it should be noticed that since Ace-K contains methylene chloride. Thus, longterm consumption of Ace-K could lead to headaches, mental confusion, liver and kidney effects.[8]
