For this assignment, we selected Breyers Creamery Style Chocolate Ice Cream and decided to compare it to its ‘low calorie’ alternative -  Delights Creamy Chocolate Ice Cream.

3. Roles of Subtitutes and Additives Fat Substitutes: The role of fat substitutes is to lessen the amount of calorie intake as well as lower cholesterol levels. The main functional property that fat substitutes contribute to the product is imitating the texture of fat by using protein, carbohydrates and other fats.

Sugar Substitutes: The role of sugar substitutes is to lessen the amount of calorie intake while still providing the same amount of sweetness as regular sweeteners. They provide sweetness without increasing blood glucose or insulin levels while also not contributing to tooth decay. The substitutes produce mouth and body feel by affecting the viscosity when present in high concentrations.

Additives: Guar gum is a gluten-free stabilizer and emulsifier typically used in almond milk, yoghurts and other dairy products. It is also a high fibre thickening, suspending and binding agent[1]. Carob bean is used as a substitute for chocolate[2].
