Ingredients

1 lb boneless skinless Chicken

3 Tbs Vegetable Oil

1 (16 oz) Jar of Salsa

1 Can (15 oz) can of Black Beans....drained and rinsed

1 Cup Shredded Cheddar Cheese

1 Cup Shredded Jack Cheese

2 Tbs chopped Cilantro


Directions

In a skillet, brown the chicken in the 3 Tbs of Vegetable oil until brown on both sides

Put into a Oven Proof Casserole Dish

Add Salsa and Black Beans

Top with both Shredded Cheeses

Bake in a 325 F Pre-heated Oven uncovered for 30 minutes until chicken is cooked and Cheese is browned

Sprinkle with Chopped Cilantro

Serve with rice and a salad.
