Roasted Winter Squash, Leek, Red Pepper and Pumpkin Seed Pasta with Sage Garlic Butter - Vegetarian

This recipe makes one serving. For larger parties, simply multiply the recipe according to the number of guests.


Ingredients

1 Tbsp. Olive oil

1 oz. *Winter Squash, diced small

1 tsp. *Garlic, chopped fine or pressed

¼ tsp. Chilli flakes

1 Tbsp. Pumpkin seeds, roasted

1 oz. Red peppers, diced small

1 oz. *Leeks, cut in ¼ inch rounds

to taste Salt & pepper

1 Tbsp. Butter, unsalted

½ tsp. *Sage, fresh


3 oz. Pasta, whole wheat


1 tsp. *Parsley, chopped fine

1 Tbsp. Parmesan cheese, fresh grated


Method

- Preheat oven to 375F.

- In a roasting pan, mix together the olive oil and winter squash. Roast in over for 10-15 minutes or until the winter squash are tender. Add the red peppers and leeks. Salt and pepper to taste. Roast another 5-10 minutes or until all vegetables are cooked, taking care not to burn the vegetables.

- Meanwhile, heat a large pot of water. Cook the pasta. Drain.

- Meanwhile, in a heavy bottomed skillet, melt the butter. Add the sage and heat on low for 1-2 minutes. Take care not to brown the butter. Toss together with the pasta and vegetables.

- Serve with parmesan cheese and parsley on top.
