Braised Red Cabbage with Dried Cranberries - Vegan

This recipe serves 1. For larger parties, simply multiply the recipe according to the number of guests.


Ingredients


1 tsp. canola oil

5 oz. *red Cabbage, sliced

1 oz. onion, white, diced

1 Tbsp. dried cranberries

1 oz. red current jelly (or similar jelly)

1 oz. red wine vinegar

to taste salt and pepper

1 Tbsp. brown sugar (vegan if desired)

1 tsp. corn starch

3 oz. apple juice


Method

- Heat the oil in a heavy bottomed pan. Add the onion and cook 1-2 min.

- Add all other ingredients. Cook 20-25 min or until the cabbage is tender.

- Adjust salt and pepper to taste.
