Select a food available in Canada and one of its 'low fat', 'zero sugar', etc. alternative. Your options are unlimited: ice cream, cookies, beverage, and of course the wide and wild range of flavours, too. The two products that you are comparing should be similar, with one of them an alternative version of the other.

Explain the roles of fat substitutes, sugar substitutes, and/or additives used in terms of the functional properties they contribute to the product:

Roles of Sweeteners:

  1. Acesulfame potassium: Fast acting sweetener that works with the other two to cover up the aftertaste. These three sweeteners work together in the absence of corn syrup to provide a sweetness as close to real sugar without the bitter aftertaste that some of the sweeteners provide. They essentially work together to cover up the different adverse flavor profiles of the other sweeteners.
  2. Sucralose: Longer lasting sweetness, this is what Splenda is, and lingers to help with the aftertaste of acesulfame potassium.
  3. Aspartame: Another fast acting sweetener with sweetness similar to normal sugar.

Roles of Preservatives:

  1. Calcium disodium EDTA: it is a chelating agent to prevent oxidation, preserving flavour, colour, and texture[2].
  2. Sodium Benzoate: Preservative effective against bacteria and yeast growth. Used for prolonging the shelf life of the carbonated beverages.[3]
  3. Potassium sorbate: preservative agent to prevent microorganism growth. It also works better in an acidic environment.[4]
  4. Potassium Benzoate: preservative agent to prevent microorganism growth.[5]

Roles of organic acid:

  1. Citric acid: It helps to lower the pH of the drink to give it a refreshing sour taste which helps balance the sweetness from sugars in the drink. The acidity also helps create an environment that is less favourable for the growth of microorganisms.

Roles of thickeners/emulsifiers:

  1. Sodium hexametaphosphate: It binds the metal ions in the water and tea to prevent them from separating in the can and creating foam on the top of the drink. Also provides extended shelf life.
  2. Pectin: Soluble polysaccharide. Used as a thickening agent. Helps to restore the viscosity and natural mouth feel for a zero sugar drink.

Flavourings:

  1. Tea Powder: Provides the flavour of Brisk Iced tea. Typically sourced from instant tea solids which are brewed and dried into a soluble power, rehydrating instantly in the drink. This is the source of the caffeine content in the drink.
  2. Natural Flavours: The proprietary blend that is used for product line flavouring (raspberry, lemon, peach, etc.) and maintaining consistent flavour throughout the year. Intentionally vague so companies don’t have to reveal their recipe.
