Introduction

Hellmann's Mayonnaise is a well-known condiment recognized for its thick, rich, and creamy texture, offering a balanced flavor between tangy and sweet. Its smooth consistency makes it easy to spread and ideal for various recipes. Hellmann’s Real Mayonnaise is made with 100% cage-free eggs, reflecting the company’s commitment to quality ingredients. To provide more choices for their customers, the Hellmann’s company also launched 1/2 The Fat Mayonnaise (commonly known as Light Mayonnaise), which contains half the fat and calories of the original. It is also low in saturated fat, cholesterol-free, and contains no trans fat.

  • Modified corn and potato starch: It is used as a thickener, stabilizer and emulsifier, help improve the texture, viscosity, stability and shelf life of mayonnaise also enhance the flavor, appearance and mouthfeel of mayonnaise[3]

Additives:

  • Sorbic Acid: Used as a preservative, an antibiotic and anti-fungal capabilities that prevent the growth of mold, allows for food to be shipped globally[4]
  • Calcium Disodium EDTA: Prevents loss of colour or flavor (preservative), odorless crystalline powder, binds to metals to prevent them from reacting with chemicals in the food[2]
  • Tocopherols/Vitamin E: Added as an antioxidant to prevent spoiling of products high in unsaturated fats[5]
