3. Role of Substitutes & Additives
Chapman's Vanilla Ice Cream
Sugar Substitutes: None
Fat Substitutes: None
Additives: Mono- and diglycerides: These are emulsifiers that help mix oil and water, improving the texture and preventing separation. They also enhance shelf life. In Canada, they are commonly used in ice cream, baked goods, and chocolate.
Guar gum: A natural thickener made from guar beans. It helps prevent ice crystal formation and gives a smooth texture. It is frequently used in Canadian frozen desserts.
Carob bean gum (locust bean gum): A plant-based stabilizer that increases thickness and works well with other gums. It is used in ice cream and yogurt products in Canada.
Cellulose gum: A thickening and stabilizing agent derived from plant cellulose. It helps maintain consistency in frozen products and improves texture.
Carrageenan: Extracted from red seaweed, carrageenan acts as a stabilizer and prevents separation in dairy products. It is widely used in Canadian ice cream.
Natural flavour and vanilla extract: Used to provide natural taste without artificial additives. In Canada, these are derived from plant or animal sources.
Chapman's Lactose Free No Sugar Added Vanilla Ice Cream
Sugar Substitutes: Maltitol syrup: A sugar alcohol that provides sweetness with fewer calories than sugar. It does not cause tooth decay or large spikes in blood sugar. It is used in Canadian ice cream and chocolate products.
Sucralose: A non-caloric sweetener that is 600 times sweeter than sugar. It is heat-stable, non-metabolizable, and used in canned fruits, syrups, and beverages in Canada.
Fat Substitutes: None (contains milk fat and modified milk ingredients)
Additives: Mono- and diglycerides: Emulsifiers that improve texture, stability, and prevent separation of fat. Common in Canadian dairy products.
Guar gum: Thickens and improves texture. Prevents crystal formation and gives smoothness to frozen desserts.
Carob bean gum (locust bean gum): Enhances thickness and works with guar gum to stabilize the ice cream structure.
Cellulose gum: Improves texture and adds smoothness by controlling water content in frozen foods.
Carrageenan: A stabilizer and emulsifier from seaweed that maintains the creamy texture and prevents ingredient separation.
Lactase: An enzyme that breaks down lactose into simpler sugars (glucose and galactose), making the product digestible for lactose-intolerant consumers. It also enhances sweetness naturally.

Labels (1 points)
1. Detailed Description of Information on Labels
Ingredients are listed in descending order by weight, so the first few (cream and sugar in this case) make up the bulk of the product. Consumers with allergies or dietary restrictions can also use this list to quickly assess suitability for their need.
Serving Size: Per 3/4 cup (188 mL) Calories: 220
Macronutrients:
- Fat: 10 g (13% Daily Value)
- Saturated Fat: 7 g (37% DV) – relatively high, as this is from cream and egg yolk
- Trans Fat: 0.3 g – naturally occurring in dairy fat
- Carbohydrates: 30 g
- Sugars: 17 g (17% DV) – a significant source of added and natural sugars
- Fibre: 0 g – indicates no dietary fiber content
- Protein: 1 g – modest amount from dairy and egg content
Micronutrients:
- Cholesterol: 45 mg – from cream and egg yolk
- Sodium: 40 mg (2% DV) – low sodium content
- Potassium: 125 mg (4% DV) – contributes to electrolyte balance
- Calcium: 40 mg (3% DV) – a source of calcium, though not especially high (counterintuitive considering it's a dairy product)
- Iron: 0.3 mg (2% DV) – trace amounts
The label uses Canada’s standard guidance:
- 5% or less is considered "a little"
- 15% or more is "a lot"
So for this product
- Saturated fat (37%) is quite high; consumers watching their heart health might be cautious.
- Sugars (17%) are also relatively high for one serving.
