Campbell’s Chicken Broth is a ready-to-use cooking ingredient that provides flavor to a variety of dishes, including soups, stews, and sauces, and it is made primarily from chicken stock.

For this assignment, the two products being analyzed are Campbell’s Chicken Broth and Campbell’s 30% Less Sodium Chicken Broth.

Ingredient lists (4 points)

    • Chicken broth (water, chicken stock)
    • Salt
    • Yeast extract (barley)
    • Natural flavour (containing celery)
    • Sugars (dextrose)

  2. Campbell’s 30% less sodium chicken broth:

    • Natural flavouring we considered it to be a flavour ingredient, and Health Canada excludes flavouring preparations from being considered a food additive.
    • Yeast extract: not considered to be a food additive according to Health Canada. Considered to be a non-additive food ingredient that is added to be a flavouring agent/enhancer.
  • Explain the roles of fat substitutes, sugar substitutes, and/or additives used in terms of the functional properties they contribute to the product
    • No fat or sugar substitutes since chicken broth is naturally low in fat and sugar
    • We identified no additives for this product as well
  • Compare and contrast the lists of the two products and explain differences
    • Regular version contains canola or soybean and 30% less sodium version contains vegetable oil (corn, canola and/or soybean)
    • Both contain: chicken broth, salt, yeast extract, natural flavour, dextrose
    • Overall: ingredients list is nearly identical between the 2 versions. The main difference is the amount of salt added. The regular version contains 920 mg sodium per 1 cup and 30% less sodium contains 630 mg sodium per 1 cup
