Why Sucralose?
Sucralose is a sweetener rather than a sweetening agent like honey or maple syrup. Sweeteners can be synthetic molecules or be derived from natural sources. Sucralose is a heat stable sweetener which is desirable as ketchup is often cooked during production. Sucralose provides the sweetness that would be supplied by sugar in the regular version but with 0 kCal and a sweetness index about 600 times that of table sugar.
