Local Food Initiative

Held round table discussion with stakeholders from different perspectives. Highlights of areas that need improvement (from pdf article):

  • It was noted that there was a need to work with distributors to make end users aware of what was in season locally to match demand with what could be supplied locally. A database would be an important tool in these efforts, but would have to be assembled by an impartial third party to mitigate competition among industry participants.
  • (Speaking about menu planning) Because meal planning generally only occurs with a 2-3 week lead time, it is difficult to make long-term supply arrangements in advance, which leads to local product supply disconnects. The easiest system from VCEC’s perspective would be a single point of contact for sales and sourcing of local food.

Area of Research- Nutrient Density and Agricultural Output

Nutrients

The idea of having understanding and research density is related to the amount of resources (i.e. inputs) in relations to nutritional value (i.e. output). This may be a useful metric in order to understand where current agricultural practices are and how we may be able to create an optimum situation with more nutrient dense crops. This of course must be done within reason of social constraints such as food choices.
