|Contains; Wheat, Milk, Soy
|Contains; Wheat, Milk, Soy
|}

=== 2. Identify fat substitutes, sugar substitutes, and/or additives used, if there is any ===
For both Werther’s Original (no sugar added version), and the regular version, there are no fat substitutes, both rely on butter and cream for fats. For the no sugar added version, Isomalt and acesulfame-potassium are used as sugar substitutes. Soy lecithin is an additive, classified as an emulsifier, and is present in both versions. Both versions also have natural and artificial flavours (which are additives).

=== 3. Explain the roles of fat substitutes, sugar substitutes, and/or additives used in terms of the functional properties they contribute to the product ===
Isomalt is a bulk sugar substitute, used to provide the physical volume, weight, and texture that sugar normally supplies. Acesulfame-potassium is used to boost the sweetness of the candy, since isomalt is only half as sweet as sugar. Together, isomalt and acesulfame-potassium can be used as a sugar substitute. Soy lecithin acts as an emulsifier. This is necessary since the caramel contains both water-soluble ingredients(such as the sugar and sugar substitute) and fats (butter and cream, which are mostly oil). The emulsifier acts as a bridge between these two, ensuring that the fat remains evenly blended throughout the sugar. The natural and artificial flavours serve to enhance the aroma and taste. This is especially important for the no sugar added version (which contains BOTH natural and artificial flavours, while the regular only contains artificial), since the sugar substitutes do not undergo traditional Maillard browning like regular sugar does.

=== '''4. Compare and contrast the lists of the two products and explain differences''': ===
'''Similarity''': Both contain butter, cream, salt, soy lecithin, and flavouring agents.

'''Difference''': Between these products, the regular version uses sugar (sucrose and glucose) as its sweetening agents, while the no-sugar-added version uses isomalt and acesulfame-potassium as sweetening agents. Isomalt is only about 50% as sweet as sucrose.<ref name=":0">{{Cite web|title=Isomalt|url=https://www.sciencedirect.com/topics/agricultural-and-biological-sciences/isomalt|url-status=live|access-date=July 21, 2026|website=ScienceDirect Topics|publisher=Elsevier}}</ref> Therefore, it is added with acesulfame-potassium to increase its overall sweetness because acesulfame-potassium is 200 times sweeter than sucrose.<ref>{{Cite web|display-authors=Irwin RD, Malarkey DE, Bristol DW, et al|title=NTP Genetically Modified Model Report on the Toxicity Studies of Acesulfame Potassium (CASRN 55589-62-3)|url=https://www.ncbi.nlm.nih.gov/books/NBK576288/|access-date=July 21, 2026|website=NCBI Bookshelf|publisher=National Center for Biotechnology Information}}</ref> Isomalt is a sugar alcohol with a very low glycemic index.<ref>{{Cite web|title=Facts About Polyols: Isomalt|url=https://polyols.org/learn-the-label/isomalt/](https://polyols.org/learn-the-label/isomalt/|url-status=live|access-date=July 21, 2026|website=Polyols Information Source|publisher=Calorie Control Council}}</ref> It replaces sugar to provide a healthier alternative for diabetic consumers as it produces little to no increase in blood glucose or insulin levels compared to sucrose.<ref name=":0" />

Isomalt is only about 50% as sweet as sucrose.<ref name=":0">{{Cite web|title=Isomalt|url=https://www.sciencedirect.com/topics/agricultural-and-biological-sciences/isomalt|url-status=live|access-date=July 21, 2026|website=ScienceDirect Topics|publisher=Elsevier}}</ref> Therefore, it is added with acesulfame-potassium to increase its overall sweetness because acesulfame-potassium is 200 times sweeter than sucrose.<ref>{{Cite web|display-authors=Irwin RD, Malarkey DE, Bristol DW, et al|title=NTP Genetically Modified Model Report on the Toxicity Studies of Acesulfame Potassium (CASRN 55589-62-3)|url=https://www.ncbi.nlm.nih.gov/books/NBK576288/|url-status=live|website=NCBI Bookshelf|publisher=National Center for Biotechnology Information}}</ref> Isomalt is a sugar alcohol with a very low glycemic index.<ref>{{Cite web|title=Facts About Polyols: Isomalt|url=https://polyols.org/learn-the-label/isomalt/](https://polyols.org/learn-the-label/isomalt/|url-status=live|access-date=July 21, 2026|website=Polyols Information Source|publisher=Calorie Control Council}}</ref> It replaces sugar to provide a healthier alternative for diabetic consumers as it produces little to no increase in blood glucose or insulin levels compared to sucrose.<ref name=":0" />
They have also introduced lines of low- or no-sugar products, including the ‘Werther's Original Sugar Free Hard Caramel Candy’

Isomalt is only about 50% as sweet as sucrose.<ref name=":0">{{Cite web|title=Isomalt|url=https://www.sciencedirect.com/topics/agricultural-and-biological-sciences/isomalt|url-status=live|access-date=July 21, 2026|website=ScienceDirect Topics|publisher=Elsevier}}</ref> Therefore, it is added with acesulfame-potassium to increase its overall sweetness because acesulfame-potassium is 200 times sweeter than sucrose.<ref>{{Cite web|display-authors=Irwin RD, Malarkey DE, Bristol DW, et al|title=NTP Genetically Modified Model Report on the Toxicity Studies of Acesulfame Potassium (CASRN 55589-62-3)|url=https://www.ncbi.nlm.nih.gov/books/NBK576288/|url-status=live|website=NCBI Bookshelf|publisher=National Center for Biotechnology Information}}</ref> Isomalt is a sugar alcohol with a very low glycemic index.<ref>{{Cite web|title=Facts About Polyols: Isomalt|url=https://polyols.org/learn-the-label/isomalt/](https://polyols.org/learn-the-label/isomalt/|url-status=live|access-date=July 21, 2026|website=Polyols Information Source|publisher=Calorie Control Council}}</ref> It replaces sugar to provide a healthier alternative for diabetic consumers as it produces little to no increase in blood glucose or insulin levels compared to sucrose.<ref name=":0" />

== Introduction ==
‘Werther's Original Caramel Hard Candies’ are caramel-flavoured hard candies popular for their creamy flavour and quality ingredients. The company August Storck KG originated in the small German village of Werther, and their iconic hard candies were crafted by the confectioner Gustav Nebel. Following their increased popularity and mainstream growth, they have diversified into many new product lines, including soft-centred or toffee-like products, as well as new flavours such as apple, coffee, and chocolate. They have also introduced lines of low- or no-sugar products, including the ‘Werther's Original Sugar Free Hard Caramel Candy’

The Werther's Original Classic Hard Caramel continues to be the brand's best-selling product globally. This article aims to examine the differences between the original hard candy product and the sugar-free alternative. <ref>{{Cite web|last=August Storck|first=KG|date=accessed July 21, 2026|title=Caramel World.|url=https://www.werthers-original.ca/en/caramel-world|url-status=live|website=Werther's Original Canada.}}</ref>

=== 1. Type out the lists of ingredients ===
{| class="wikitable"
|+
# Natural and artificial flavours (wheat)
# Soy lecithin
# Acesulfame-potassium (6mg/serving)
|}

Isomalt is only about 50% as sweet as sucrose.<ref name=":0">{{Cite web|title=Isomalt|url=https://www.sciencedirect.com/topics/agricultural-and-biological-sciences/isomalt|url-status=live|access-date=July 21, 2026|website=ScienceDirect Topics|publisher=Elsevier}}</ref> Therefore, it is added with acesulfame-potassium to increase its overall sweetness because acesulfame-potassium is 200 times sweeter than sucrose.<ref>{{Cite web|display-authors=Irwin RD, Malarkey DE, Bristol DW, et al|title=NTP Genetically Modified Model Report on the Toxicity Studies of Acesulfame Potassium (CASRN 55589-62-3)|url=https://www.ncbi.nlm.nih.gov/books/NBK576288/|url-status=live|website=NCBI Bookshelf|publisher=National Center for Biotechnology Information}}</ref> Isomalt is a sugar alcohol with a very low glycemic index.<ref>{{Cite web|title=Facts About Polyols: Isomalt|url=https://polyols.org/learn-the-label/isomalt/](https://polyols.org/learn-the-label/isomalt/|url-status=live|access-date=July 21, 2026|website=Polyols Information Source|publisher=Calorie Control Council}}</ref> It replaces sugar to provide a healthier alternative for diabetic consumers as it produces little to no increase in blood glucose or insulin levels compared to sucrose.<ref name=":0" />

'''Difference''': Between these products, the regular version uses sugar (sucrose and glucose) as its sweetening agents, while the no-sugar-added version uses isomalt and acesulfame-potassium as sweetening agents. Isomalt is only about 50% as sweet as sucrose [3]. Therefore, it is added with acesulfame-potassium to increase its overall sweetness because acesulfame-potassium is 200 times sweeter than sucrose [5]. Isomalt is a sugar alcohol with a very low glycemic index [4]. It replaces sugar to provide a healthier alternative for diabetic consumers as it produces little to no increase in blood glucose or insulin levels compared to sucrose [3].

=== 1. Type out the lists of ingredients ===
{| class="wikitable"
# Natural and artificial flavours (wheat)
# Soy lecithin
# Acesulfame-potassium (6mg/serving)
|}

# Soy lecithin
# Acesulfame-potassium (6mg/serving)
|}

== Introduction ==

== '''Werther's Original - Regular Hard Caramels VS No Sugar Added Hard Caramels''' ==

== Introduction ==
