Roasted Potatoes with Fennel, Swiss Chard and Onions - Vegan

This recipe serves 1. For larger parties, simply multiply the recipe according to the number of guests.


Ingredients

4 oz. *New potatoes, white, cut in ½ inch cubes (LFS Orchard Garden only)

1 oz. *Fennel, diced in ½ inch cubes

½ oz. onions, red, diced

1 tsp. *garlic, chopped fine or pressed

to taste salt and pepper

1 tsp. *rosemary, fresh, chopped fine

1 Tbsp. Oil

1 oz. *Swiss chard, chopped

1 tsp. *parsley, flat leaf, roughly chopped


Method

- Preheat the oven to 350 F

- In an oven proof pan, mix the potatoes, fennel, oil, onions, garlic, rosemary, salt and pepper together. Bake in oven for about 30 min.

- While hot, toss in the chard and parsley.

- Adjust salt and pepper as needed and serve.
